Crispy Baked Chicken Wings


Yes you read that right CRISPY BAKED CHICKEN WINGS.  I love chicken wings, especially smothered in buffalo sauce. When I was pregnant with my now 3 year old I pretty much lived off of them. Serious. So much so, after having my daughter I almost couldn't look at chicken wings let alone make them, Jay acted like I was depriving him. I've obviously come around and my love for chicken wings is back. Now lets make some, my mouth is watering.

Set your oven rack to the second highest position and preheat your oven to 250°. Prepare your baking pan by covering it with foil. Top your foil lined pan with a wire rack. Depending on the size of your baking pan/rack you may need to have 2 prepared to avoid overcrowding.

Next toss your chicken wings into a large bowl. I'm using approximately 2 lbs. of wings. Add baking powder, salt, paprika and garlic powder to your wings. Toss to coat, I use my hands. Once the seasonings and the baking powder are well combined place them on your wire rack. Be a bit cautious to not over crowd your rack, you do want the air to be able to circulate around the wings. 

Once your oven is preheated pop in the wings and bake for 30 minutes.  After 30 minutes of cooking your wings will look not look delicious or crispy but stick with me, they will. Turn your oven to 450° and continue to bake your wings for 55 more minutes, no flipping them or moving them around, they are kind of a set it and forget it deal. 

While your wings are cooking lets get some sauces prepared. I almost always make the wings half buffalo sauce and half honey garlic (for the kids, but I end up eating quite a few).  

To make the honey garlic sauce, start with a small sauce pan. Add 2 tbsp of olive oil and 4 cloves of garlic, minced. Saute the garlic until soft and fragrant. Add 1 cup of honey, 1/4 cup of soy sauce and some black pepper. Simmer the sauce over medium-low heat for 10 minutes. Keep a close eye on the sauce as it will foam up quickly. If it does foam up simply lift the pot off the heat and gently stir until the foam goes back down. Cool the sauce a bit before coating the wings. The sauce is a bit on the thinner side, it will thicken as it cools.

To make the buffalo sauce, measure out 1/2 cup of Franks Red Hot Sauce. Add about 4 dashes of Worcestershire sauce to the hot sauce and 1/2 tbsp corn starch. Mix well until the corn starch is well combined. In a small sauce pan melt 1/2 cup of butter and add the hot sauce mixture. Bring to a simmer and simmer for a few minutes. Remove from the heat and let cool slightly before adding to wings.

 Okay back to the wings. Once the 55 minutes are up remove the wings from the oven and grab a large bowl for each sauce flavour you're making. In my case I grabbed 2. Add your cooked wings to the bowl accordingly. I did about half and half. Pour your desired amount of sauce over the wings and gently toss using a pair of tongs to help mix. Once the wings are coated in the sauce you're ready to enjoy!

Crispy Baked Chicken Wings


Ingredients:
  • 2 lbs of chicken wings
  • 2 tsp baking powder
  • 2 tsp Salt
  • 1 tbsp Paprika
  • 2 tsp garlic powder
Method:
  1. Set your oven rack to the second highest position and preheat the oven to 250°
  2. Put the chicken wings in a large bowl and add the baking powder, salt, paprika and garlic powder. Mix well so the wings are evenly coated.
  3. Line a couple large baking sheets with foil and top with a wire rack.  Arrange your seasoned wings on the wire racks, leaving a bit of space between the wings.
  4. Bake the wings in the preheated oven for 30 minutes. 
  5. Keeping wings in the oven set oven to 450°. 
  6. Bake for 55 minutes.
  7. Turn your oven off and leave the wings in for a few more minutes. At this point I like to get plates ready, sauces etc.
  8. Gently toss your wings in a large bowl, and toss with sauce. Enjoy!

Copycat Jack Astor's Bruschetta

  If you guys haven't had the privilege of trying this bruschetta or a version of it then you NEED to make this. Not to toot my own horn but its delicious. Homemade Chicken Soup

Well it's been a week and a half and I'm still sick...everyone around me is sick too. So far food wise I've tried beef bone broth and one night desperate for some summer in my life thinking it would revive me, I sent Jay outside to chip the ice off the barbecue so I could grill steak.  Obviously food doesn't heal you, or maybe it does...what do I know. But I think it's okay to try. For example chicken soup, delicious and comforting, probably won't magically make your cold go away but, it will make me feel better while I'm eating it. To start your soup you will need a whole roasted chicken, or a whole chicken carcass. I made roast chicken last night for dinner, knowing we would only eat the breasts and I would be making soup today I cooked the chicken until the breasts were cooked, so the legs were still a bit underdone.
