Naan Bread Pizza Two Ways

Naan bread is the perfect vehicle for a variety of delicious toppings, the best part is you can keep it in the freezer and grab a piece or two whenever you need it. Today i'm making a BBQ chicken version using left over BBQ chicken from dinner the other night. The recipe for that will for sure be coming soon, it was incredible...not to toot my own horn sorta speak but, it was seriously delicious. I will also be making a sun dried tomato pizza, if you're not a tomato fan don't dismiss this pizza too quickly sun dried tomatoes offer a huge amount of flavour and don't actually taste like a tomato, well I don't think they do. 

Let's start with the sun dried tomato pizza. Grab yourself a baking sheet and cover it with foil, because quick clean up that's why. As I mentioned before I freeze my naan bread so I pulled out a naan for each pizza I was making and set it on the baking sheet. By the time I was done prepping my ingredients they were pretty much defrosted. Time to prep the ingredients. Preheat your oven to 400°.

You will need, 1/4 - 1/2 cup of grated mozzarella cheese, 1-2 tbsp sun dried tomatoes minced, pizza sauce approximately 3 tbsp, 2 tbsp fresh basil chiffonaded - divided, olive oil, salt & pepper and a balsamic reduction (glaze) - optional.





Add your pizza sauce











Top with diced sun dried tomatoes, if you're not the biggest sun tomato fan you can mince them finer, but I would for sure suggest trying it.










Top with 1/4 - 1/2 cup of shredded mozzarella cheese, some fresh cracked black pepper and a few drizzles of olive oil and half of the freshly chopped basil.










Bake for 10-13 minutes or until the cheese is melted, bubbly, and starting to turn golden on the edges.







Finally top with remaining fresh chopped basil, and drizzle with balsamic glaze (optional)

Up next...BBQ chicken. Just as before this will cook in a 400° oven for 10-13 minutes. You will need half a left over BBQ'd chicken breast diced or 1/4 cup of cooked rotisserie chicken diced tossed with 1-2 tsp of BBQ sauce, 1 tbsp of red onion sliced, 1/4 - 1/2 cup of mozzarella cheese shredded, 2-3 tbsp BBQ sauce (I use Sweet Baby Ray Original), and some fresh cilantro chopped.






Spread BBQ sauce on the naan bread, I like to push a little extra to the edges because when it bakes it gets caramelized and delicious.









Top with red onions and chicken. Now if you're observant you may have noticed my "red onions" are not in fact red onions at all. They're scallions. I didn't have any red onion so I improvised, but I have had it both ways and prefer the red onion. The pizza was still delicious.




Top with mozzarella cheese and give a few cracks of black pepper. Now if you are a big BBQ sauce fan (which I am) I suggest adding a few drizzles of BBQ sauce on top of the cheese before baking. I did not as I made this pizza for my daughters for lunch and I didn't want the extra mess...know what I'm saying 😉



Bake for 10-13 minutes until the cheese is melted, bubbly and starting to turn gold on the edges. Also if you're a cilantro person (which I very much am) top this pizza with cilantro before serving, I promise you won't be disappointed. Again this was actually made today for my daughters lunches so I didn't add any cilantro.

Both of these pizzas are tasty but the possibilities are endless as are the flavour combinations. The best part, I think start to finish making both kinds at the same time was 20 minutes maybe total. Happy pizzaing. Let me know what other pizza topping combos you come up with. If my kids continue to be sweet little children and don't start destroying the place I will suggest others below. 😀

Buffalo chicken pizza - sauce either blue cheese or ranch dressing, toss cooked chicken in                                       Franks Red Hot Sauce and top with mozzarella cheese. This is                                               Jay's  favourite.

Margarita Pizza - Tomato sauce, fresh torn basil leaves and fresh mozzarella cheese,                                         drizzled with a good olive oil. Basic classic but delicious.

Caramelized Onion Pizza - Use a thin layer of caramelized onions as a sauce, top                                                            with bacon, mozzarella cheese, crumbles of goat                                                                      cheese and drizzle BBQ sauce over the top before                                                                  cooking.

Copycat Jack Astor's Bruschetta

  If you guys haven't had the privilege of trying this bruschetta or a version of it then you NEED to make this. Not to toot my own horn but its delicious. I might have beat Jack Astor's at their own game. Picking a favourite recipe out of all my recipes would be like picking a favourite child. Homemade Chicken Soup

Well it's been a week and a half and I'm still sick...everyone around me is sick too. So far food wise I've tried beef bone broth and one night desperate for some summer in my life thinking it would revive me, I sent Jay outside to chip the ice off the barbecue so I could grill steak.  Obviously food doesn't heal you, or maybe it does...what do I know. But I think it's okay to try. For example chicken soup, delicious and comforting, probably won't magically make your cold go away but, it will make me feel better while I'm eating it. To start your soup you will need a whole roasted chicken, or a whole chicken carcass. I made roast chicken last night for dinner, knowing we would only eat the breasts and I would be making soup today I cooked the chicken until the breasts were cooked, so the legs were still a bit underdone.
