Copycat Circle K Slushy/7-11 Slurpee!!


With the nicer weather finally upon us I think it's only fitting to make some cold drinks/treats. I love eating ice, I especially love a good slushy (i'm Canadian so that's what I will be calling this from here on). The crunch of perfectly fluffy ice is magic. I originally found this recipe at emilyreviews.com, I'm not exactly sure who was the first to do it, I found hundreds online.  This is pretty easy but can get messy. 


You will need a carbonated beverage of some sort. The carbonation actually gives you a fluffy ice rather than a crushed ice texture. When I was a teenager I worked at a Mac's (the same company as a Circle K, Mikes mart, etc.) So I remember changing the syrups from the slushy machines I believe that even the "juice" flavours were carbonated. But if you have a Soda Stream you can carbonate anything. That being said select your carbonated beverage of choice (I'm using Coke because that's actually my favourite Slushy flavour). I will also be using 2L. Dump about a 1/4 of the bottle out into something to save it. Place the lid back on your 2L bottle and place it in the freezer. Once frozen through pull out of the freezer and leave out on the counter for about 15-20 minutes. You will need a bit to have melted to actually get it out of the bottle. *Note* before you open your bottle set it into your sink or on a towel, a lot of gasses will want to escape at this point and some liquid can come out. 










Grab some scissors and cut the top off the bottle. Dump about half of the frozen beverage into your food processor. 














I also used a steak knife to break up the frozen pop (soda for you southerners) to help get it out of the bottle.










Grab the pop you reserved from before and add a splash into it, place the lid on and puree until everything is mixed well. You may need to add a couple more splashes of the reserved pop to help get everything broken up. Once it's at your desired consistency you're done! Serve into cups with a straw and a spoon and enjoy. Half the 2L bottle ended up making a good sized glass for Jay and I as well as 2 small cups for the girls. (for the parent police, my girls NEVER get pop so this was a special treat for a hot day. Everything in moderation. Also mind you're business 😜) The full 2L will probably yield 5-6 adult/older kid portions.






*note* If you're observant you will notice i'm using plastic straws 😖 I am just trying to finish off my bag before I switch to paper or silicon. I love turtles and made sure they were not littered and disposed of properly.

Copycat Jack Astor's Bruschetta

  If you guys haven't had the privilege of trying this bruschetta or a version of it then you NEED to make this. Not to toot my own horn but its delicious. Crispy Sweet Potato Fries With Curry Aioli

Sweet potato fries are so delicious, especially if they're well seasoned, crispy and served with a curry aioli for dipping. Mmm...these are actually baking while I am writing this post and I am so hungry I cannot even wait for these babies to come out of the oven. Let's jump right into it. There is a few tips and tricks to making crispy oven baked sweet potato fries. One is soaking/rinsing the starch off the sweet potatoes, as you would do with regular potatoes when making fries...right? 😉 Another is ensuring they're as dry as possible before adding seasonings and oil, and tossing the uncooked fries in a bit of corn starch.
