Hey! I'm Nicki!

Just a little about me. I am a mother of four kids...yes four. Two teenage boys and two little girls one has just approached the...what do they call them....the troublesome threes?....the traumatic threes? Either way if you're a parent that has had the pleasure of experiencing it you know exactly what I mean. And my youngest, my baby, my weak spot, is just about one and a half, though she feeds off of her sister so lets just say i'm busy. If there's one thing I can tell you about my kids is that they eat A LOT...I mean a lot, a lot. I feel like I am a snack maker/butler and meal maker before mother sometimes. I am the other half to my patient, loving, cheese to my cracker fiance of forever Jay. He also loves to eat....notice a theme? 
I love to cook (most of the time) and I love to feed people. I have become that family/friend that people call for recipes, cooking help and even place food requests with, so I thought maybe I would take my knowledge and my recipes and see if anyone else would enjoy them. I hope you love them as much as we do.

Copycat Jack Astor's Bruschetta

  If you guys haven't had the privilege of trying this bruschetta or a version of it then you NEED to make this. Not to toot my own horn but its delicious. I might have beat Jack Astor's at their own game. Picking a favourite recipe out of all my recipes would be like picking a favourite child. But this would be top 3 for me for sure.    You will need a balsamic glaze (reduction) for this recipe. You can buy it (I do) or you can make your own by simply adding a good quality balsamic vinegar to a pot and simmering until the vinegar has reduced by 1/2 or 3/4. Add sweetener of your choice like honey, brown sugar, etc. I use this one.  To start lets make an Aioli (lemony, garlicy mayo). Add 1 cup mayo to a medium sized bowl, squeeze the juice of half a lemon into mayo. Add a good amount of fresh cracked black pepper and 3 cloves of minced garlic. Crispy Sweet Potato Fries With Curry Aioli

Sweet potato fries are so delicious, especially if they're well seasoned, crispy and served with a curry aioli for dipping. Mmm...these are actually baking while I am writing this post and I am so hungry I cannot even wait for these babies to come out of the oven. Let's jump right into it. There is a few tips and tricks to making crispy oven baked sweet potato fries. One is soaking/rinsing the starch off the sweet potatoes, as you would do with regular potatoes when making fries...right? 😉 Another is ensuring they're as dry as possible before adding seasonings and oil, and tossing the uncooked fries in a bit of corn starch. Lastly baking on a piece of parchment paper and not flipping them until the last half of mins of cooking. Patients is key.
